I just made this for dinner tonight. Took me about 10-15 minutes to prepare. Looks beautiful and definitely pretty enough for company. It has a nice crunch and the cranberries- also known as craisins, give it great flavor. You can use store bought roasted nuts as a shortcut.

INGREDIENTS













  • 1½ lb fresh green beans trimmed










  • 2 Tbsp extra-virgin olive oil










  • - salt and pepper to taste










  • ½ cup roughly chopped roasted unsalted nuts-mixed










  • ¼ cup dried cranberries-craisins










  1. Toast nuts either in oven or over stovetop. Chop them in large pieces and set aside.



  2. Bring a large pot of salted water to boil. Add green beans;cook 4-6 minutes until tender. Drain well.



  3. Meanwhile, in bowl combine oil. craisins, and nuts. Add green beans to bowl. Toss to coat and add some pepper and salt to taste, about 1/4 tsp each. Serve warm or at room temperature.

can this be done with be done the same with frozen green beans?

I was surprised how easy and quick this took.
I was never crazy about green beans but this recipe gives them a complete different twist! and it is dietetic too!!
