I just made this for dinner tonight. Took me about 10-15 minutes to prepare. Looks beautiful and definitely pretty enough for company. It has a nice crunch and the cranberries- also known as craisins, give it great flavor. You can use store bought roasted nuts as a shortcut.
1½ lb fresh green beans trimmed
2 Tbsp extra-virgin olive oil
- salt and pepper to taste
½ cup roughly chopped roasted unsalted nuts-mixed
¼ cup dried cranberries-craisins
Toast nuts either in oven or over stovetop. Chop them in large pieces and set aside.
Bring a large pot of salted water to boil. Add green beans;cook 4-6 minutes until tender. Drain well.
Meanwhile, in bowl combine oil. craisins, and nuts. Add green beans to bowl. Toss to coat and add some pepper and salt to taste, about 1/4 tsp each. Serve warm or at room temperature.
