INGREDIENTS













  • 1 package wide egg noodles










  • 1 (.5 cup) sour cream










  • 0 (.5 cup) parmesean cheese










  • 0 (.25 tsp) salt










  • 1 package morningstar crumbles










  • 1 red pepper seeded and chopped










  • 1 bunch green scallions, white and green chopped










  • 1 Tbsp tomato paste










  • 1 tsp italian seasoning










  • 0 (.25 tsp) salt










  • 1 can diced tomatoes










  • 2 cup shredded cheese I use mixture of mozarella and cheddar










  1. preheat oven to 425



  2. boil the noodles per package directions to al dente



  3. drain noodles and put in a 9 by 13 pan



  4. toss noodles with the sour cream, paresean cheese and 1/4 tea salt



  5. warm/cook the morningstar crumbles



  6. add the bell pepper and scallions and cook until crisp-tender



  7. make a hole in center of the morningstar crumbles mixture and add the tomato paste and toast for a minute. (I cover the pot) for about 1 minute



  8. add the italian seasoning and the other 1/4 tea of salt and mix



  9. add the diced tomatoes, stir and bring to simmer for about 2 minute/ it may thicken a little and that is fine



  10. pour the "meat" mixture over the noodles



  11. sprinkle the cheese (the kind of shredded cheese you like) plain cheddar or a mixture, use the cheese you like. it should be enough to cover the meat mixture.




  12. bake in oven until the cheese is melted and the edges bubble approx 15 minutes.



  13. let rest for 10 minutes prior to serving
