Every time I go out to eat with my husband he orders minestrone soup. Hence, I'm always on the lookout for a delicious recipe. I've tried countless recipes in the past but they were never perfect. One rainy day last week I decided it was the perfect day to experiment. Well, I tweaked and made changes, and came up with this award-winning recipe!! Be sure to double it because it freezes really well. Hearty appetite!!

INGREDIENTS













  • 1 cup diced onions










  • ½ cup diced celery










  • ¾ cup diced carrots










  • 3 Tbsp oil










  • 1 cup chopped tomato










  • 2 tsp salt










  • ¼ tsp black pepper










  • 1 tsp basil










  • 1 tsp oregano










  • ¼ cup parsley flakes










  • 1 tsp crushed garlic










  • 2 cup tomato sauce










  • 4 cup water










  1. Saute the onions, celery, and carrots in the oil for 10 minutes.



  2. Add the tomatoes and spices. Mix well.



  3. Add rest of ingredients and bring to a boil. Lower flame and simmer for 40 minutes.
