
Every time I go out to eat with my husband he orders minestrone soup. Hence, I'm always on the lookout for a delicious recipe. I've tried countless recipes in the past but they were never perfect. One rainy day last week I decided it was the perfect day to experiment. Well, I tweaked and made changes, and came up with this award-winning recipe!! Be sure to double it because it freezes really well. Hearty appetite!!

INGREDIENTS
1 cup diced onions
½ cup diced celery
¾ cup diced carrots
3 Tbsp oil
1 cup chopped tomato
2 tsp salt
¼ tsp black pepper
1 tsp basil
1 tsp oregano
¼ cup parsley flakes
1 tsp crushed garlic
2 cup tomato sauce
4 cup water
Saute the onions, celery, and carrots in the oil for 10 minutes.
Add the tomatoes and spices. Mix well.
Add rest of ingredients and bring to a boil. Lower flame and simmer for 40 minutes.
