I'm much too lazy to get out a food processor, so I like potato recipes that don't require one. This was my attempt at a latke, but it is more like mashed potatoes. I don't like most mashed potatoes, because I find them too bland, but this is interesting enough for my palate.

INGREDIENTS













  • 4 medium potatoes










  • ¾ cup milk










  • 2 eggs










  • 2 Tbsp corn starch/flour










  • 1 Tbsp mayonnaise










  • 1 pinch pepper










  • 1 pinch salt










  • ½ tsp soup mix










  • - cooking spray










  1. Peel and chop potatoes so they will cook quickly, and add to boiling water



  2. When potatoes are soft, drain water, and mash and mix with the remaining ingredients (except the oil)



  3. Spray a large frying pan generously and add about half the mixture



  4. The mixture will stick to the bottom, so use a spatula to scrape it off and flip as well as you can



  5. Fry until slightly crispy, and repeat with remaining mixture
