I don't like big chunks of sweet potato, so I tried to find easy recipes for smaller pieces/fries, but they kept burning. I tried experimenting, and was pleased with this result. It's easy to make on Erev Shabbos, when I have a saucepan and frying pan out anyway, and a little oil or water left over won't affect the taste, so they don't really have to be cleaned between recipes.

INGREDIENTS













  • 1 medium sweet potato










  • 1 pinch GPS (garlic, salt, and pepper spice)










  • 1 pinch basil










  • - cooking spray










  1. Peel and cut sweet potato in half.



  2. Boil sweet potato until a fork slides in, but not completely soft.



  3. Drain and slice halves into chips or slices, about 1/3 inch thick.



  4. Spray frying pan and add slices over medium/low flame.



  5. Sprinkle on spices and mix well.



  6. Stir and spray every few minutes for 10 minutes.



  7. Taste to make sure well spiced and thoroughly cooked, and re-spice or continue until satisfied.
