all in one pan, sloppy Joes with a twist
1 lb White potatoes,peeled and cubed
1½ tsp salt, divided
- pepper, to taste
4 Tbsp oil, divided
2 large onions, minced
1½ lb ground beef
½ cup ketchup
1 Tbsp vinegar
1 Tbsp Dijon mustard
1 Tbsp honey
1 Tbsp Worcestershire sauce
Place cubed potatoes in a pot and add water to cover. Add 1 teaspoon salt and bring to a boil. Simmer until tender, around 15 minutes. Drain the potatoes and mash with 3 tablespoons oil and 1/4 teaspoon salt and pepper.
Heat 1 tablespoon oil in a large skillet over medium high heat. Add the onion, 1/4 teaspoon salt, and pepper to taste;saute until golden. Add the beef and cook for 6-8 minutes, breaking it up with a spoon and spooning off and discard any grease.
Meanwhile, mix together ketchup, vinegar, mustard, honey, and Worcestershire sauce. Add to the beef and cook for 1 minute.
Transfer the beef mixture to a 2 quart oven to table dish and top with mashed potatoes. Sprinkle paprika on top.
Broil on high until it begins to brown, 2 to 4 minutes.
