This has such a buttery taste to it, but you can make it parve or dairy! Perfect for a winter dinner or Shabbos soup!
2 Tbsp Butter or Margerine
1 LArge Onion, diced
8 Cloves of GArlic, diced
6 Potatoes, cubed
1 Tbsp Salt
1 tsp Pepper
1 tsp Parsley Flakes
1 tsp Garlic POwder
1 Water to cover
Melt butter in a large saute pan. Add onion and garlic and saute until caramel color.
Add potatoes and saute for about 2 minutes, then add water and spices.
Bring to a boil and then reduce heat to medium-low for about 15-20 minutes.
Blend soup, but keep a bit of chunks to it and cook for another 15-20 minutes.
