No mixer needed - just a bowl and spoon.

INGREDIENTS













  • 1 cup sugar










  • 1 cup brown sugar










  • 2 eggs










  • 2 tsp vanilla extract










  • 1 tsp baking soda










  • 1 tsp salt










  • ½ tsp ground ginger










  • 1 tsp cinnamon










  • ¼ tsp ground cloves










  • ¼ tsp ground nutmeg










  • 1 Tbsp cocoa










  • 3 cup Flour










  • ⅔ cup oil










  • 1 cup white chocolate chips (good quality)










  • - chopped pecans










  1. Preheat oven to 350. Line 2 cookie sheets with parchment paper.



  2. Mix the Sugar through the cocoa until fully incorporated. (first 11 ingredients)



  3. Mix in flour



  4. Mix in oil



  5. Create 3 long logs (2 on one cookie sheet, 1 on the second). shape neatly With your hands. (similar to making biscotti)



  6. Bake 18 minutes - sprinkle the chocolate chips over the top and return the pan to the oven.



  7. Bake an additional 2 minutes. They keep on cooking after you remove them - they will be soft. Once you put on the chocolate chips and bake the second time do not leave them in too long or the chocolate chips' consistency will be off.



  8. Spread the chocolate chips evenly over the cookies as icing immediately after removing from the oven. sprinkle with the nuts.



  9. Let cool and icing set - you can place in the freezer to speed this up and then cut into bars.
