A perfect peanut butter bite! Make them mini for even cuter cupcakes! For a quicker option, bake it in a bundt or 9x13. I use the natural peanut butter for this recipe and it comes out great!
2 cup flour
2 cup sugar
1 tsp baking powder
1 cup oil
1 cup hot water
¼ cup peanut butter
1 tsp vanilla extract
½ cup milk/soy milk/almond milk
Mix together, flour, sugar, baking power and oil.
Dissolve the peanut butter in the hot water. Add to the flour mixture and mix again.
Add eggs and vanilla. Mix
Add milk or milk substitute. Mix until smooth.
Pour into cupcake molds and bake at 350 for approx. 25 minutes.
Frost with your favorite chocolate frosting for some more yumminess!
