This is a very hearty flavorful soup. This recipe is Pareve & vegetarian but you can easily make it meat by adding beef or chicken to it. This can be done either on the stove top or in a crockpot (my best friend!!). Don't be scared of the exotic spices. It's doesn't give off heat but flavor.
1 large spanish onion, cut into chunks
2 Tbsp olive or canola oil
4 cloves garlic, sliced
1 very large loose carrot, peeled & cut up
2 green zucchinis, cut up into chunks
3 sweet potatoes, peeled & cut into ¼'s
2 idaho potatoes, peeled & cut into ¼'s
1 butternut squash, peeled & seeded & cut into large dice
2 Tbsp salt
1 Tbsp black pepper
1 Tbsp garlic powder
2 Tbsp beef soup mix
2 Tbsp hawaij seaoning mix
6-8 cup water
1 bunch cilantro, chopped
In a large pot ove med high heat add oil & warm up. add onions to the pot & sprinkle a pinch of kosher salt to the onions. sautee for 5 min. add garlic & cook for 5-7 min. then add the rest of the vegetables, stirring when all added. Cover & cook for 15-20 min
Add the seasonings & soup mix. Stir. Cover & cook for 10 min. Add water. Stir. Cover & let cook for 1/2 hour-40 min. Taste & add seasonings if needed.
Add the cilantro. Stir. Cover & cook for another 1/2 hour.
This can also be done in a crock pot. Just put everything into a 5-6 qt crockpot. Mix. Cook on high for 4-6 hours or low 6-8 hours.
You can easily make this with either chicken or beef, Just add the meat of choice to the pot before the onions.
