chocolate/coffee flavored brownies
8 oz semi sweet chocolate chips
⅛ cup instant coffee,mixed with ¼ cup hot water
½ cup unsalted transfat free margarine, softened
1 cup sugar
1½ Tbsp vanilla extract
½ tsp cinnamon
½ tsp salt
1 cup flour
Preheat oven to 375 degrees.
grease 2 8x8 square pans.
Place chocolate chips and coffee in top of double boiler over simmering water over medium heat and melt until smooth. set aside.
In large bowl, beat margarine and sugar till fluffly. Add eggs 1 at a time, beating well after each addition. Stir in vanilla, cinnamon and salt. Mix in melted chocolate.
Add flour and mix until just blended. Divide batter equally into pans and spread smoothly.
Bake at 375 degrees for 35 minutes or until edgesstart to pull away from sides of pans. Cool on racks. Cover and refrigerate 8 hours. Cut into bars to serve.
yield: 3 dozen brownies.
