These mini cupcakes are easy to prepare and look beautiful when decorated. Great to give to friends who are making a simcha.
1 cup flour
1 tsp baking powder
¼ tsp salt
⅓ cup soy milk or orange juice
½ tsp vanilla extract
6 Tbsp margarine
½ cup + 1 Tbsp sugar
1 colored chocolate (for decorating)
1 white sugar pearl beads or sprinkles(for decorating)
Cream margarine and sugar.
Sift together dry ingredients. Add to margarine and sugar.
Add rest of ingredients. Mix till smooth.
Pour into lined mini cupcake tins 3/4 of the way full.
Bake 9-14 minutes at 350. Test if done with a toothpick, keep a close eye because they bake quickly.
To decorate - melt colored chocolate in the microwave. Dip cupcakes in. Sprinkle a few pearl beads or sprinkles on top.
