I usually make a big batch of this spice mix and use it on everything. Its my cheat into making a great dinner with very little work. The flavors here are sweet and a little spicy but you can adjust the heat by dialing up or down on the amount of cayenne pepper. This recipe is so good even my one year old will eat a whole piece of chicken all by herself!

INGREDIENTS













  • 1 whole chicken cut into quaters










  • 1 (½ cup) Light brown sugar










  • 1 Tbsp salt










  • 1 (½ Tbsp) freshly groung black pepper










  • 1 (½ Tbsp) garlic powder










  • 1 Tbsp paprika










  • 1 (½ Tbsp) chilli powder










  • 1 (1½ tsp) cinnamon










  1. preheat oven to 400



  2. wash and pat the chicken dry thoroughly (this ensures even brown roasting)



  3. mix the spices and brown sugar together and rub on to the skin of the chicken (don't forget the bottom)



  4. roast chicken in an open pan for an hour



  5. enjoy!
