When I tried this recipe I was expecting to find something amazing. I was only tinkering around my kitchen as usual. The first bite was an unbelievable adventure! It was creamy and chewy and sweet and tangy and hit every flavor note in my mouth! I hope you'll enjoy this as much as I did! One more thing! This is guilt free because it's officially dubbed as diet food!!

INGREDIENTS













  • 2 Large portobello mushrooms










  • 1 Medium onion










  • 2 Garlic cloves










  • 1 (1 Tbsp) Balsamic vinegar










  • 2 Sprigs of fresh thyme plus more for garnish










  • 1 Salt and pepper to taste










  • 2 (1 oz) Goat cheese










  1. Preheat the oven to 400 degrees



  2. Cut the stems off the mushroom and clean the caps



  3. To one mushroom spoon out the gills



  4. Chop up the other mushroom along with the onion and garlic cloves



  5. Sauté the chopped mushroom, onion, and garlic.



  6. When the mushrooms start to soften add the vinegar and the thyme leaves and sprinkle with salt and pepper



  7. Remove from flame and blend until the mixture is semi chunky



  8. Mix the still hot mixture with 2 oz of goat cheese reserving some for garnish.



  9. Stuff the mushroom with the mixture and bake for 20 minutes



  10. Sprinkle the rest of the goat cheese on top and bake until browned



  11. Sprinkle with thyme leave and take a big bite!!
