INGREDIENTS













  • 4 Eggs










  • 1¼ cup Coconut Oil










  • ¾ cup White Sugar










  • ¾ cup Brown Sugar










  • 1 cup All Purpose Flour










  • 1 cup Whole Wheat Flour










  • 2 tsp Baking Powder










  • 2 tsp Baking Soda










  • ½ tsp Salt










  • 2 tsp Cinnamon










  • 2 tsp Vanilla










  • 3 cup Grated Carrots










  • 1 cup Chopped Walnuts










  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.



  2. In a large bowl, beat together eggs, oil, white and brown sugar, and vanilla. Mix in flours, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in walnuts. Pour into pan.



  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan.



  4. To Make Frosting with Dairy: In a medium bowl, combine 1/2 cup butter, 8 oz of softened cream cheese, 2-4 cups of confectioners' sugar (depending on how sweet you like it), and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Frost the cooled cake.



  5. For a Pareve Cake: Use the same proportions as listed in #4, but sub margarine and non-dairy cream cheese... Tastes just as great! Either way, you can also sprinkle some additional chopped nuts on top for decoration.
