It's as tasty as it looks. A good alternative to potato kugel especially on Pesach. I don't peel my zucchini, but if you prefer it without the peel, peel it.
4 potatoes, peeled
4 small zucchinis
5 medium carrots, peeled
¾ cup hazelnut oil (can substitute a different oil)
1 Tbsp salt
Grate the vegetables with the shredding disc of your food processor.
Mix in eggs, oil and salt.
Pour into a greased 9x13 pan.
Bake @ 425 for 30 minutes. Lower the oven to 350 and bake for 1 more hour.
