It's as tasty as it looks. A good alternative to potato kugel especially on Pesach. I don't peel my zucchini, but if you prefer it without the peel, peel it.

INGREDIENTS













  • 4 potatoes, peeled










  • 4 small zucchinis










  • 5 medium carrots, peeled










  • 1 onion










  • 6 eggs










  • ¾ cup hazelnut oil (can substitute a different oil)










  • 1 Tbsp salt










  1. Grate the vegetables with the shredding disc of your food processor.



  2. Mix in eggs, oil and salt.



  3. Pour into a greased 9x13 pan.



  4. Bake @ 425 for 30 minutes. Lower the oven to 350 and bake for 1 more hour.
