A delicious kid-friendly alternative to fried chicken.
4 chicken cultlets
1 cup pecans, finely chopped
¼ cup corn flake crumbs
2 tsp paprika
1 tsp salt
½ tsp pepper
⅓ cup mayonnaise
3 Tbsp honey
Preheat oven to 425.
Combine nuts, breadcrumbs, salt, paprika and pepper in a shallow bowl.
In a separate bowl, whisk honey and mayonnaise together.
Coat chicken with honey-mayo mixture and then roll into the pecan mixture until well coated.
Spray a roasting rack with cooking spray. Arrange the chicken pieces on the rack.
Bake for 10 minutes. Turn the chicken over. Bake for an additional 12 minutes or until chicken is tender.
