After trying many recipes, I finally found this one that passed all the taste tests with flying colors.
6 large potatos peeled
1 large onion
½ cup vegetable oil
1.5 tsp salt
¾ tsp black pepper
Shred onion and 3 potatoes using the s blade of your food processor. Grate the remaining 3 potatoes using the shredding disc of your food processor.
Transfer the potato and onion mixture to a large mixing bowl.
Beat the eggs with the salt and pepper (you can use the s blade of your food processor for this).
Mix the egg mixture with the potato and onion mixture.
Heat 1/2 oil until very hot.
Carefully pour the oil into the potato mixture. (Hear the sizzle?) Mix well.
Cover and bake @ 350 for 30 minutes.
Uncover and bake @ 550 until the top is browned.
