Easy and versatile. Great and yummy way to eat your veggies :). Feel free to play around with the proportions or add any other vegetable you have lying around the house. I've substituted butter for the oil for a slightly different flavor. You can mix them with pasta or serve or rice.
You can make this in a frying pan on the stove but roasting them in the oven is just easier.
1 Tbsp olive oil
2 green or coloured peppers
- salt and papper to taste
Slice the peppers into strips.
Slice the onions into thin half rings.
Place your onions and peppers onto a greased cookie sheet. Drizzle with olive oil. Add salt and pepper to taste.
Bake at 400 for 10 minutes or until done.
