INGREDIENTS
¼ cup butter or margarine
¼ cup canola oil
½ cup brown sugar
1 egg
1 tsp vanilla extract
¾ cup whole wheat flour
1½ cup whole oats
½ tsp baking soda
¼ tsp salt
½ cup raisins
½ cup chocolate chips
Preheat the oven to 350 F/180 C.
Combine butter/margarine, oil, sugar, egg, and vanilla in a food processor fitted with the steel blade and process until well-combined.
Add flour, oats, baking soda, and salt and process with quick on/off pulses until a batter forms.
Carefully remove the blade from the processor and mix in chocolate chips and raisins by hand.
Form small balls from the batter and bake on cookie sheets lined with parchment paper for 15-18 minutes. Let cool 5 minutes before eating.
