This dairy dip is delicious with fish or veggie sticks, though my favorite way to eat it will always be on top of a latke.

1 medium cucumber, grated
2 scallions, chopped
1 clove garlic, minced
1 cup sour cream
1 pinch of salt + pepper
Place grated cucumber in a small mesh strainer and drain as much liquid as possible (this helps avoid a watery dip).
Combine all ingredients except salt and pepper in a small bowl and mix well. Taste and season as needed.
Garnish with a bit of chopped scallion, cover, and refrigerate until ready to use.
