This dairy dip is delicious with fish or veggie sticks, though my favorite way to eat it will always be on top of a latke.

INGREDIENTS













  • 1 medium cucumber, grated










  • 2 scallions, chopped










  • 1 clove garlic, minced










  • 1 cup sour cream










  • 1 pinch of salt + pepper










  1. Place grated cucumber in a small mesh strainer and drain as much liquid as possible (this helps avoid a watery dip).



  2. Combine all ingredients except salt and pepper in a small bowl and mix well. Taste and season as needed.



  3. Garnish with a bit of chopped scallion, cover, and refrigerate until ready to use.
