These are a great way to sneak in healthy pureed fruits, vegetables, or beans. Good choices are applesauce, sweet potato, carrot, and any sort of bean. I always burn my pancakes unless I stand over and watch, so that's my recommendation!
1.5 cup flour blend (whole wheat, ground flaxseed, ground oats...)
1.5 tsp baking powder
1 pinch salt
1 cup pureed fruits/vegetables/beans
3 Tbsp oil
3 Tbsp sweetener (honey, brown rice syrup, sugar)
Mix the dry ingredients.
Blend the rest and stir into dry ingredients.
Pour onto lightly oiled pan on medium heat.
Turn over when middle begins to bubble and become firm.
Remove and eat when ready!
