A quick weeknight meal.
8 oz Macaroni pasta
2 medium avocados
⅔ cup fresh basil, chopped
2 Tbsp fresh lemon juice
1 Tbsp olive oil
3 garlic cloves, finely chopped
⅛ tsp salt
¼ tsp freshly ground black pepper
½ cup fresh parmesan, shredded fine
Cook Macaroni according to package directions, drain.
While the pasta cooks, put into a large bowl, avocado, basil, lemon juice, olive oil, garlic, salt, and pepper. Add the hot pasta and mix to combine.
Sprinkle with cheese and serve
