INGREDIENTS













  • 1 tsp Honey










  • 1 cup Warm water










  • 1 Tbsp Active dry yeast










  • 1.5 cup Bread flour










  • 1.5 cup All-purpose flour










  • 1 tsp Sugar










  • 1 tsp Salt










  • .25 cup Sesame seeds, toasted










  • 2 Tbsp Sesame oil










  • 1 Egg white










  • 1 tsp Kosher salt










  • 1 Tbsp Sesame seeds, toasted










  1. Proof yeast with honey and 1/4 c warm water for 5-10 min.



  2. Combine both flours, salt, sugar and 1/4 c toasted sesame seeds. Stir in yeast mixture, remaining 3/4 c warm water and sesame oil. Stir until dough pulls away from sides of bowl.



  3. Turn out onto lightly floured surface and knead until smooth and elastic, 8-10 min. adding more flour as needed. Place dough in lightly greased bowl, cover with clean towel or plastic wrap. Let rise in warm place until doubled in volume, 45 min to an hour.



  4. Punch down dough, let rest 5 min. Roll out to a 16x9 inch rectangle. Using a pizza wheel or sharp knife cut into sixteen 1-inch wide strips.




  5. Topping: Brush sticks with egg white and sprinkle with Kosher salt and sesame seeds. Cover with clean cloth. Let rise until double in volume, 45-60 min. Bake in preheated oven 425 F for 15 min. or until golden and firm.
