You can make the dough one day in advance, let it rise for 1/2 hour and refrigerate. When ready to use bring the dough to room temperature, shape and let rise again.
about 24 doughnuts
5 cup flour
1 oz yeast
1 cup warm water
¼ cup oil
½ cup apple juice OR orange juice
4 Tbsp sugar
1 vanilla sugar
Dissolve yeast in warm water. Add it to your mixing bowl. Add flour, pour juice on top; then add remaining ingredients. Turn on your mixer and mix until a soft dough is formed.
Place dough into a clean bowl and cover with a towel. Let rise for 1/2 hour. Sprinkle counters with flour and roll out dought until 3/4 inch thick. Form balls using a glass or cookie cutter. Let rise again for 1/2 hour. Fry in oil, let it cool and fill w/a filling of your choice.
Sprinkle w/confection sugar.
