You can use whole wheat flour to make these muffins more wholesome. They are delicious and easy. Best is to use fresh blueberries, but you can substitute with frozen. It will make the muffins go blue in colour and you should drain any juice from them before you put them in.
1½ cup flour
2 tsp baking powder
½ tsp salt
6 Tbsp oil
½ cup sugar
1 tsp vanilla sugar
½ cup milk, soy milk or orange juice
1 cup blueberries
½ stick margarine (2 oz margarine)
¾ cup sugar
1 cup flour
Preheat oven to 380F.
Mix oil and sugar, whisk in egg, vanilla and milk.
Add dry ingredients and fold in blueberries.
Mix streusel ingredients till it forms a crumble.
Pour into muffin cases. And sprinkle streusel on top.
Bake for 20 minutes.
