A light version of tzimmes thats doesn't have the heavy honey taste. I use a plastic cup to measure and use about 1/2 plastic cup of sugar and orange juice.
2 Tbsp oil
⅓ cup sugar
⅓ cup orange juice
1 pinch salt
Peel and cut carrots into thin rounds.
Saute the carrots in the oil for 2 minutes.
Add water to cover the carrots halfway. Cover pot and let cook for 20 minutes.
When carrots are slightly soft, add the sugar, orange juice and a pinch of salt. Let cook an additional 15 minutes. Uncover the last 5 minutes.
