DELICIOUS! That's the best way to describe this soup. You can substitute any vegetable and you will still get this wonderful tasty soup. Easy and very nutritious. One bowl is never enough! Freezes great too.
1 large onion
2 medium yellow squash
2 medium zucchini
10 mini carrots
3 celery stalks
4 medium potatoes
15-20 cherry tomatoes
Â¼ cup small pasta-round or any shape
3 Tbsp vegetable soup mix
- salt and pepper to taste
- oil for sautÃ©ing
Peel and dice onion. Saute in oil until soft and light in color. Add diced celery and keep sauteing for about 10 minutes.
Peel and slice squash and carrots into thick pieces. Add to pot and mix with the sauteed vegetables. Add peeled and cubed potatoes. Add mini carrots cut in half. Add vegetable soup mix and salt and pepper. Mix well.
Fill up pot with water. Cook on medium flame for about l-2 hours until vegetables are getting soft. Adjust seasoning. Mix soup well. Add whole cherry tomatoes and uncooked pasta. Cook another 1/2 hour until soft.
Feel free to add any other vegetables. Frozen cauliflower is a great addition.
