A KosherEye Signature Recipe. An easy salad to prepare that is full of delicious and healthy ingredients. Not only does it look fabulous but it also tastes divine! Add as much or as little spinach and cheese as you like. We entered amounts but it really is up to you. You can personalize this salad.

INGREDIENTS













  • 8 oz smoked Mozzarella cheese, cut into small chunks










  • ¼ cup Parmesan cheese (or more, grated)










  • 1 lb package gemelli pasta - cooked per package instructions










  • 3 cup fresh spinach, chopped or torn into small pieces










  • 1 red bell pepper fresh or roasted, small strips or cubes










  • 2 Tbsp fresh basil, chopped










  • ¾ cup mayonnaise










  • ¼ cup red wine vinegar










  • 1 Tbsp minced garlic










  • 2 cup fresh parsley










  • 2 cup diced red onion










  • ¼ cup sour cream










  • 1½ tsp black pepper










  • 1 tsp fresh lemon juice










  • 1 Tbsp honey










  • ⅛ tsp Tabasco sauce










  • ⅛ tsp kosher salt - we use a pinch.










  1. Mix together salad dressing ingredients: mayonnaise, red wine vinegar, garlic, parsley, red onion, sour cream, black pepper, lemon juice, honey, Tabasco sauce and salt..



  2. Toss with remaining ingredients. Optional: add grape tomatoes, sun-dried tomatoes, black olives



  3. Serve chilled or at room temperature. KosherEye suggests serving at room temperature to savor the full flavor of the cheese.
