One of my favorite soups and so easy to make. Not your typical cauliflower soup.I like to remove some cauliflower pieces before blending and returning to pureed soup for a chunkier texture.
1 bag Bodek frozen cauliflower
2 onions, chunked
8 cloves garlic
1 cup olive oil
7 Tbsp chicken soup mix
8 cup boiling water
3-4 Tbsp dill
Place cauliflower, onion and garlic in baking pan. Cover with olive oil.
Bake, uncovered, in oven set at 380 degrees F(180 C) for one hour.
Mix chicken soup mix with boiling water in large pot. Add dill and salt and pepper to taste.
After an hour, remove pan from oven and pour cauliflower, onions and garlic into your pot with the water and spices.
Cook until cauliflower softens.
