INGREDIENTS













  • 2 onions, diced










  • 1 Tbsp crushed garlic










  • 3 Tbsp oil










  • 2 lb pumpkin










  • 1 potato










  • 2 carrots










  • 5 cup water










  • 1 Tbsp soy sauce










  • - salt and pepper, to taste










  1. Saute the onion and the garlic in the oil until golden.



  2. Peel, seed and cut into chunks the pumpkin, potato and carrots.



  3. To the pot add the pumpkin, potatoes, carrots and water.



  4. Bring to a boil.



  5. Add the salt, pepper and soy sauce.



  6. Let simmer for 1 hour.



  7. Blend until smooth.



  8. Serve with toasted pine nuts.
