INGREDIENTS
½ lb black-eyed peas
- water for soaking and cooking
1 cup sugar
1 Tbsp lemon juice
1 pinch salt
Soak the peas overnight in water.
Drain peas. Place into a pot and cover with fresh water. Add the sugar and lemon juice.
Cook, covered, until the water has cooked off and the peas are very soft, about 2 to 3 hours. You may need to add more water if peas aren’t soft enough.
