Great side dish, colourful and tasty. Best cooked till al dente
6 cloves garlic minced
1 Red Pepper
Â½ kg Carrots
2 Tbsp Sugar
1 tsp Salt
Dice the onion and fry with the garlic.
Cut the pepper, carrots and squash into long thin sticks.
First add the pepper and carrots to the onion and sautee for 15-20 mins.
Then add the squash and cook another 5-10 mins. Add the spices. Dont over cook the vegetables, they should be al dente.
