
I created this recipe out of necessity and for health reasons. My husband needs breakfast, and (as lots of us do) won't take the time to eat before going to work. Now he takes one of these bars and combines it with a banana for a long lasting nutritious meal that sustains him for over 4 hours. They can either be refrigerated, or kept at room temperature. We take them with us on outings as a snack. They're Yummy!!

INGREDIENTS
2 cup rolled oats
2 cup whole wheat flour
1 cup coconut oil
½ cup honey
4 oz shredded coconut
½ cup ground flax
½ cup sunflower seeds
½ cup raisins
½ cup almond or peanut butter
1 tsp baking soda
2 Tbsp very hot water
Preheat oven to 350F. Combine all dry ingredients in large bowl. Melt honey and coconut oil together in microwave and set aside
Mix baking soda with hot water and add to honey/oil mixture. Stir well, and add to dry ingredients. Mix well. (I use my Kitchen Aid mixer because of the consistency).
Place ingredients in an 11x7x1.5 ungreased baking dish (or somewhere thereabouts). Bake for 15 minutes. Let cool completely before cutting.
*** If desired, for a sweeter version, put a layer of dark chocolate chips on top prior to baking.
