INGREDIENTS













  • 5 lb idoho potatoes










  • 1 zucchini










  • 1 onion










  • 8 eggs










  • ½ cup oil










  • 1 Tbsp salt










  • ¼ tsp black pepper










  1. preheat oven on 410 F.



  2. Peel potatoes, zucchini and onion and set aside in a bowl of water



  3. in a large bowl mix eggs oil and spices



  4. Use the food processor to grate the potatoes, zucchini and onion. (I use the 'Brauns' food processor and it has a blade that grates the potatoes to a mush. If you're using a different blade it wont come out as fluffy but still very tasty)



  5. Mix grated potatoes mixture with the egg mixture (in the bowl of the eggs). Make sure its mixed very well.



  6. Line a 9x13 inch baking pan with baking paper. Poor mixture into the pan. Bake at 410 F. for 2 hours



  7. You can enjoy your kugel at this point. It will be white and fluffy! Or you can cover it well with heavy duty silver foil. Reduce oven temperature to 225 and place the kugel back into the oven overnight or just for another few hours on Friday afternoon. It should turn brownish and delicious!
