We were looking to stretch a few pieces of salmon for a Hoshana Raba lunch (where no one even wanted a lot to eat, and we still needed all the courses) So we made this. Worked great.
- fresh salmon
- italian dressing
- cornflake crumbs
Cut up the salmon into 1" cubes. Marinate in italian dressing for at least half hr.
Take pieces out of dressing and dip into cornflake crumbs. Spread out in baking pan.
Bake on 350 for 15-20 minutes.
Serve over a bed of your favorite salad mix and some dressing.
