
Here is another version of Croissant. This is more of an Italian-brioche taste. It is also Mezonos made with juice. It has a softer taste and is very simple to prepare. Again, you can use your imagination and add filling inside or keep it plain. Either way, everyone loves the taste of these. I like the crescent shape, but this dough works well into any shape you desire.

INGREDIENTS
8 cup flour
4 eggs
12 oz margarine-3 sticks
2 oz fresh yeast
1 cup orange juice
½ lb sugar
1 Tbsp vanilla sugar
¾ tsp salt
Place in mixer all dry ingredients flour,sugar,yeast,salt, vanilla sugar. Pour orange juice on top and mix for 2 seconds. Add eggs and margarine and mix well until dough forms. Add more flour if needed.
Place in bowl and cover. Let rise 1/2 hour to 3/4 hour.
Divide dough into 4-6 pieces. Roll out each piece into a circle. Don't roll out dough too thin-it's better thicker. Cut each circle into 8-10 triangles. Roll up from thicker part and shape into crescent shape and place on parchment paper.
Let rise 15-20 minutes. Brush with egg wash, sprinkle some toppings. Bake at 350 for 20-25 minutes.
