This is from Efrta's new cookbook, Kosher Elegance. Works beautifully next to fish and a fresh vegetable salad.

INGREDIENTS













  • 8 white potatoes










  • 2 sweet potatoes










  • 2 Tbsp olive oil










  • ¼ cup boiling water










  • ½ tsp salt










  • - pinch black pepper










  • 3 Tbsp onion soup mix










  • 1½ cup heavy cream










  • - Parmesan cheese










  1. Preheat oven to 400F. Peel and cube potatoes. Place in pan, drizzle with oil and sprinkle with salt and pepper. Add boiling water. Cover and bake for 1 1/2 hours.



  2. Mix together heavy cream and onion soup mix. Remove pan form oven and uncover. Drain liquid and pour over cream soup mix mixture. Sprinkle with cheese.



  3. Bake uncovered for 20-30 minutes.

I made this last week because I needed some new recipes for the nine days. I must say this was an amazing side dish! It was so easy yet vey different! The heavy cream adds a delicious dairy flavor to it.
