
Mendelsohn's cheese calzones are the ultimate in my opinion. Yet, this recipe from the Fine Cooking magazine is super close. It is really simple to make, especially with bought pizza dough! Enjoy!

INGREDIENTS
3 cloves of fresh or frozen garlic
⅛ tsp black pepper
2 Tbsp olive oil
1¼ tsp red pepper flakes (optional)
15 oz ricotta cheese
8 oz shredded mozzarella cheese = 2 cups
1½ oz parmasean cheese =¾ cup
1 large egg yolk
1 Tbsp oregano
¼ tsp salt
1 pizza dough
Saute garlic and black pepper in olive oil for about 2 minutes.
Let garlic cool for about 10 minutes, then add all the other ingredients.
Refrigerate.
Cut pizza dough into preferred size. Fill with cheese mixture and roll up or fold into calzones. Bake at 500℉ degrees for 11 minutes or until golden.
