Easy and quick, and can be prepared in advance. If freezing, bake for approximately half the time, until set.
1 lb carrots
10 oz squash
1 lb baking potatoes
½ tsp salt
1 tsp black pepper, flat
150 ml sunflower oil
5 oz matzo meal
Peel all the vegetables, except the squash. Grate them and mix together.
Whisk eggs until light and fluffy, then add to vegetables. Add the rest of the ingredients.
Pour into 10x8" pan and smooth out. Bake on 350℉ for 1 - 1 1/4 hours until golden.
