A great side dish.
750 gram sweet potato cut into chunks
2 red onions cut into thick wedges
2 Tbsp olive oil
1 tsp ground ginger
1 tsp ground cumin
½ finely chopped red chilli (optional)
1 Tbsp orange juice
1 Tbsp honey
- salt, to taste
1 handful chopped fresh coriander leaves
Heat oven to 375℉.
Put the sweet potato and onions in a single layer in a roasting pan.
Whisk together the olive oil, ginger, cumin, chilli (if using), orange juice and honey. Pour over the vegetables and toss to coat well. Season with salt and roast for 15-20 minutes or until tender.
