The best honey cake ever! You can make this ahead of time and freeze it.
1 bundt pan
1 cup sugar
1 cup honey
½ cup oil
1 cup boiling water
2 tsp instant coffee
2½ cup flour
1 Tbsp cocoa
1 tsp cinnamon
½ tsp ground cloves
1 Tbsp vanilla sugar
1 Tbsp baking powder
Beat the egg whites with 1/2 cup sugar well until a stiff snow forms. Set aside.
Beat the egg yolks with the sugar well.
Lower the mixer and gradually add in the oil and honey.
Mix the instant coffee with the boiling water.
Mix the dry ingredients together.
Gradually add the dry ingredient to the mixer alternating with coffee. Start with the dry and end with the dry.
Fold the whites into the batter.
Place in a bundt pan or long loaf pans (No need to grease).
Bake in a preheated oven at 180C - 350F for 45 minutes. The loaf pans will be done 35-40 minutes.
