Deliciously creamy... and low fat too!
1 onion, diced
2 garlic cloves, crushed
2 Tbsp oil
2 large zucchini, peeled and sliced
1 lb frozen cauliflower
1 Tbsp salt
6 pepper, to taste
Saute onion and garlic in oil until translucent.
Add zucchini, cauliflower, salt, pepper, and water to almost (but not quite) cover.
Bring to a boil. Simmer for 30 minutes.
Blend with immersion blender. Enjoy!
