INGREDIENTS













  • 3 onions diced










  • 1 medium eggplant cubed










  • 2 small zucchini sliced










  • 2 carrots sliced










  • 2 peppers sliced










  • 1 tomato diced










  • 3 Tbsp oil










  • 1 Tbsp sugar










  • 8 oz tomato sauce










  • ½ tsp salt










  1. Saute onions in oil.



  2. Add all vegetables.



  3. Mix together tomato sauce, sugar, and salt, and pot over vegetables.



  4. Cook on low flame for 40 minutes.

I made this for supper and being quite a large recipe, I had enough leftovers for the next 2 days. It was delicious rewarmed in the microwave for a quick lunch too. This is a dieter's delight !

This is a delicious side dish! I made it originally for a Shabbos night side dish and it tasted yum! I plan to make another batch of it and freeze it for supper side dishes! It's also an easy recipe to play around with you can add different vegetables according to your liking!
