INGREDIENTS













  • 1 Large Whole Wheat Pizza crust or Laffa










  • 1 medium eggplant, peeled, and sliced thin










  • - Kosher salt










  • 1 Tbsp olive oil










  • 1 onion, sliced into half rings










  • 2 crushed garlic cloves










  • 1 (15 oz) can diced tomatoes, drained










  • ½ lb ground turkey










  • - pepper










  1. Preheat oven broiler



  2. Slice eggplant into 1/3-inch-thick rounds. Place in single layer on a foil-lined baking sheet. Brush both sides with olive oil (or spray generously with Pam) and season with salt.



  3. Broil eggplant 2 to 3 inches from heat until golden brown and tender, 3 to 8 minutes on each



  4. Preheat the oven to 420



  5. meanwhile in a frying pan heat the olive oil. Add the onions and garlic and cook until soft



  6. Add the ground turkey and break up the pieces as it cooks. Once cooked through add the can of tomatoes. Season with salt and pepper



  7. Cook uncovered for about 5 - 10 minutes over medium flame.



  8. layer eggplant over pizza shell or laffa. Pour over the turkey-tomato mixture.




  9. Bake in oven at 420 for 10 minutes.
