INGREDIENTS













  • 2 lb lamb leg steak or cubed










  • 4 Tbsp olive oil










  • 2 Tbsp lemon juice










  • 1 Tbsp chopped fresh flat parsley










  • 1 Tbsp dried thyme










  • 1 pinch dried oregano










  • - black pepper, salt and lemon wedges










  1. Mix the olive oil, lemon juice, herbs and spices together. Place the meat in a shallow dish and pour the marinade over each lamb.



  2. Make sure to turn the meat so it’s covered well. Let marinate 2-4 hours in the refrigerator. Remove about 30 minutes prior to cooking.



  3. Heat barbeque well and coat with oil. Place meat on the grill for 8-10 minutes, rotating it on each side.
