
Chicken and couscous, baked together in one pot. For a regular supper I use Osem Israel pear couscous. Try using a gourmet couscous like Trader Joe's brand for a different taste. You can add diced sweet potatoes and zucchini to prepare a complete dinner in one pot.
To get the couscous to bake faster with the chicken I soak it in water from my urn when putting the chicken in the oven but its not really necessary.

INGREDIENTS
1 onion, sliced
4 pieces of cleaned chicken, skin on
¾ cup duck sauce
- paprika
- onion powder
- garlic powder
1 cup water
1 cup couscous
In a large pan, layer the onions and then the chicken. Cover with duck sauce and add the spices.
Bake uncovered at 400*F for 1 hour
Add the couscous beneath the chicken. Pour water over couscous. Swish pan to cover it all with the gravy and water.
Bake an additional 25 minutes, uncovered. Keep an eye on the couscous: you may need to add more water. If there is too much water at the end, bake another 5 minutes.
