
This is a fantastic supper that is quick to put together and really tastes very yummy and looks very gourmet.
I use ready made whole wheat laffa or pizza shells but you can use home made or make them on mini pizzas.
For a healthier option you can omit the olive oil and just spray with pam. I think it tastes almost the same and is faster to do.
Adapt the amount of cheese to your preferences.

INGREDIENTS
1 Large eggplant, peeled
3 Tbsp olive oil (opt)
- salt
1 prebaked laffa or pizza shell (can use whole wheat)
- pizza sauce (like don pepino)
¾ cup shredded cheese
2 Tbsp minced garlic
¼ tsp dried red pepper flakes
Preheat the broiler
Slice eggplant into 1/3-inch-thick rounds. Place in single layer on a foil-lined baking sheet. Brush both sides with oil (or spray generously with Pam) and season with salt.
Broil eggplant 2 to 3 inches from heat until golden brown and tender, 3 to 8 minutes on each
Preheat the oven to 450
spread pizza sauce over the surface of the pizza shell or laffa. Sprinkle about 1/4 cup cheese over the sauce. Cover with eggplant, overlapping the slices. Sprinkle on the remaining cheese.
Sprinkle on the garlic and red pepper flakes.
Bake the pizza at 450 for about 15 minutes.
