
Scrumptious yeasty cheese buns that can be made many different ways. Either as an individual treat in muffin tins or as a cake which makes a beautiful presentation. This can be also made in a bobke form with crumbs on top or you can make a glaze- cream cheese or confectionary. The dough is soft and pliable-use your creativity and have fun. Freezes great! INGREDIENTS
5 cup flour
1½ oz fresh yeast
¾ cup warm water
½ cup orange juice
8 oz margarine-(2 sticks-american)
1 egg
2 egg yolks
½ cup sugar
1 tsp vanilla sugar
- Filling:
1 lb whipped cream cheese
¾ cup sugar
1 tsp vanilla sugar
1 egg yolk
Put flour in mixer-crumble yeast in center. Put sugar on top & add the warm water. Let sit for a few minutes until the yeast dissolves.Then add all ingredients. Mix well on medium speed until a dough forms. If it's sticky add another 1-2 cups flour. Place dough in a bowl that is greased and floured
Cover and let rise until doubled in size-about 1 hour. Prepare filling. If you like the yeast cake with a lot of filling double recipe. It can be mixed by hand or with an immersion blender.
Divide dough into 2 or 4 parts. Roll out dough to a rectangle shape. Smear cheese filling over entire dough and roll-up jellyroll style. To make individual pieces, cut slices about 1-2 inches thick. Turn and place them in greased muffin tins or in pretty paper holders. Let rise for 1/2 hour.
Either egg wash the buns or sprinkle on a crumb mixture( 1 stick marg=4 oz,1 1/2 cup flour,1/2 cup sugar,1 vanilla sugar) Bake 350 until done.
For the cake, grease a tube pan well. Place cut slices brick style. Keep building up the pan until 3/4 full. Let rise 1/2 hour until cake reaches top. Egg wash-1 egg & drop of water) Bake on 350 for about l hour until golden brown in color. Decorate by using a glaze or sprinkle confectionary sugar.
